Cat5, nevermind Cat5e or Cat6, is overkill for a DS1/T1 line's frequency needs, but it is a good choice because it's cheap. Be sure to use plenum/horizontal cable if this cable is transversing outside of the room, so that you meet fire code. Don't use patch/vertical/PVC cable. Just get a pair of wall mount "biscuit block/boxes" and run it straight-through, pins 1-1, 2-2,... 8-8.
