I looked in the voip-info.org wiki, and it mentions paging and intercom, but searching the page for "paging" or "intercom" produces gives me no results other than a mention that you can do it with the Polycoms.

Search for it on Google. Basically, it involves provisioning the Polycom phones to auto-answer in a certain situation, and then sending an additional SIP header field to provide that situation.
