init.d script source extra parameters from /etc/sysconfig/<scriptname>
(/etc/default/<scriptname> on Debian).

Set this variable in that /etc/sysconfig/asterisk (to -Fvv)

BTW: why do you prefer it to start verbosely? This tends to clutter the
logs with useless information.
