Well, what is "large?"  Transcoding is a fairly CPU-bound process.

In principle, the answer to your question is probably more yes than no, because if Asterisk in userspace is not sufficient, there exists a wealth of Asterisk-oriented dedicated transcoding hardware from the usual suspects.
