Check the settings in /etc/asterisk/logger.conf, for example:

...
;debug => debug
;security => security
;console => notice,warning,error
;console => notice,warning,error,debug
console => notice,warning,error,debug,verbose(5)
messages => notice,warning,error
full => notice,warning,error,debug,verbose,dtmf,fax
...

If you don't have verbose listed for console, then AFAIK, you won't
see verbose messages however many -v options you give it!
