You might look into using iaxComm or ZiaxPhone (available from http://iaxclient.sourceforge.net/). I have successfully gotten iaxComm to compile and work on an iPAQ H3670 running GPE/Familiar Linux in the past. ZiaxPhone is supposed to run on the Zaurus or Opie.
