Setting faxdetect=no causes everything to behave absolutely properly, with no problems whatsoever.
For reference sake - upgrading the grandstream phone to the 1.5.0 firmware has meant that it now behaves similarly to the Cisco phone and carries audio to the handset even during the non-ringing stage.
I use current CVS, a Grandstream BT100 (1.5.0), and have faxdetect=incoming, and I have been experiencing no problems of the type you mention.
