I use VMware + (Generic linux flavor) + Asterisk, for testing. Works
great, sound and mic work even. Kind of a bloated aproach seeing you
need ~128meg ram to even boot the OS but still it's fun to play with..

You might also want to consider MS Virtual Server, as it is geared more
to running as a service. VMware workstation / VirtualPC are more like
desktop tools (although I think they have some higher-end server-like
products, but I haven't used them).
