I think that has to be done on a device by device basis.

In come cases the configuration change is done on the client (software/device).

If it's a card that goes in the linux box that is running asterisk you can set that in the config file for the device.

zapata.conf for Zaptel cards.
phondev.conf for QuickNet (PhoneJack / Linejack cards.)

If it's an external device, or a PC running a VoIP client, there is usually a configuration option for that.
