If your SIP setup is working and you are happy with it then thats cool.. If it aint broke don't fix it..
The advantages of IAX are as you said, you can make multiple calls at the same time but also that NAT isn't an issue and AFAIK it doesn't have as much of an overhead as SIP..
SIP has very little overhead. Its the RTP you use in conjunction with SIP that has the huge overhead. Same with H.323, which uses exactly the same RTP for the actual communication.
