Becuase it's lean and mean and doesn't rely on the "too many cooks in the kitchen" implementation that is SIP. IAX2 works seamlessly behind NAT and doesn't have any of the weird issues that SIP tends to have (STUN, SER, SIP Proxies, etc., etc.).
