I never set the timezone in the Polycom config file. I set it in the DHCPd config file.

/etc/dhcpd.conf:
   option ntp-servers 172.17.2.1;
   option time-offset -21600;

Subquestion to this ( although I much prefer setting the offset in the ipmid.cfg file myself ): How do you specify a negative offset when you are using the dhcp server that comes with windows server?
