The biggest thing to watch is that the amperage is at least as high.
The device wont draw more than it needs (not true of voltage but is true
of amperage) but if you try to draw more than the transformer outputs it
will get really hot and eventually the transformer will die. 

Polarity is aparently the same (most use center positive to prevent
accidental shorting), but should be marked    
  - ----C ---- + 
something like that so you can tell if its the same.  

In a conference hall odds are power is unclean (especially with long
extension cords where you get more hramonic distortion and such) and RMS
is lower than stated, but it shouldnt be too big of a problem for that..
