Firstly you can have the host linux system ignore PCI devices and then have them directly accessible to the guest, rather then virtual layers in between. It's worth noting that applications like Asterisk and MySQL have poor/no support for multiple CPUs (or cores) and actually perform worst on boxes with multiple cpus/cores then a single core system. I've read that Xen can handle these resources much better while telling the guest that there is only one CPU.
