David: I **had** problems via IAX in the past when there was transcoding involved between Provider to my Asterisk server. See if your provider (the ones you are having issues with) are transmitting at G711, and your server is allowing ONLY G711. If the audio is clear and without problems -- then the issue is related to transcoding between two end points.
For my experiment sake, I would simply connect Zoiper directly with the carrier(s) in question -- and run a call for an hour or so to investigate quality or dropping issues. That's my experience.
