In Postfix you want to edit /etc/postfix/transport, be sure to reference the transport hash in the main.cf file. Sendmail is a Mailer Macro I believe, Courier MTA you use esmtproutes , Qmail is control/smtproutes.

Basically, you want to say to the MTA on the asterisk server, any mail for domain.com goes to 192.168.x.x or what ever IP your exchange server is. Each mta has a slightly different way of doing it, but it's esentially the same.

If you control the domain and DNS you can do it more elegantly with DNS, but it's usually simpler to use a transport/route in the MTA to redirect it.
