I use Suse on all servers including one with Asterisk.
The main reasons are:
- YaST - very easy to use system config tool.
- SuseFirewall - an easy readable config file for iptables. 
- cool green lizard - ;-)

There is a package repo to install asterisk and dahdi:
http://download.opensuse.org/repositories/home:/vitsoft:/asterisk-dahdi/

I used Suse on laptop since version 8.2 up until 11.1 but now Ubuntu is
having a test run and so far wining ;-)
