I agree with Darrick. I have tried using asterisk inside of a VM (VMware), and the problem is the timing. The shared resources of the host in Workstation or Server products, as good as they are, are not quite quick enough (in my opinion) to run a workable PBX.
 
Maybe if you are running the ESX server... but I've not had any expirence with that. And maybe in Xen... but I haven't had any expirence with that either.

Doubtful.  Even if it was, the timing would likely be way off.  The
VMWare image is nice for testing and playing around with changes inside
a controlled envirnment, but I would not rely on it for production use.
