Theoreticly you should be able to get a low bandwidth VoIP connection over an Edge connection but not with a GPRS/GSM connection due to its asyncronous connection type.
I guess the real question is "are there any Linux drivers for these devices". If there are then Asterisk will not see it but rather see a viable network stack with which it can send its packets over. Be aware that most EDGE providers block the use of VoIP protocols for revenue protection reasons.
