OK, makes sense. I deleted the symlink /tmp/etc/ so that changes can be made to configuration files under /etc, and are kept after a reboot. Works like a charm. I was a bit confused about the mix between the read-only filesystem, the symlinks to RAM, and the UnionFS bit.
