I use a SIP image that seems to work on the whole series, even the ones
with 8 meg of flash and 32 meg of ram.
Configuring the 3810 is another story. They can sometimes be difficult,
but eventually made to work
These often show up on eBay, and sometimes can be had inexpensively.

I have used several of the HP T 5000 series
The ideal ones are the 5700 with 256Meg flash and memory can be easily
upped even to 512Meg, though 256Meg seems fine.
Even the older slower ones will do.
The PCI slot, if equipped, is hard to use unless one is lucky enough to
find the expansion kit. The right angle PCI connector and larger covers
do allow for one PCI card, such as the Digium TDM400 or Sangoma A200.
Much easier is to use a Cisco 3810 equipped with up to 6 analog modules
and SIP, but then theres more power and a fan
