Excellent idea.  Learning how to manage a VM host is a good skill to have.

From my research people have successfully run VMware ESXi and Proxmox on the 
HPE MicroServer which has 4 actual cores (no hyper-threading) and AMD has fewer 
side-channel exploit issues than Intel.

Though for CPU performance, even my Qotom i3-6100U tests slightly over 2x of 
the AMD X3421 ... the i7-7500U would be faster but possibly pushing the heat 
dissipation rate of the case.

The Qotom's extra NIC's could be useful if they can be passed native to a VM 
guest, an Intel i211 NIC pcie card could be added to the MicroServer if extra 
NIC's are needed.

The MicroServer clearly wins on disk options with good cooling, the single 
Qotom 2.5" SSD could get cooked inside the i7 case ... a mSATA disk would even 
get hotter.

The MicroServer supports up to 32 GB of RAM, the Qotom is 16 GB max.  Though 8 
GB should get you started.

I really don't know which box would provide the better VM Host server ... I'm 
sure others here have more experience than I.
