AUCTeX modes and hooks are listed in the manual, (info "(auctex)Modes
and Hooks").  The hook for the LaTeX mode is `LaTeX-mode-hook'.  If I
remember correctly, `latex-mode-hook' is the hook for the Emacs native
LaTeX mode, not the AUCTeX one.
