Indeed I set `Latex-fill-break-at-separators' to nil in my init file. Probably '(\\\[ \\\]) only would be enough, too, but actually filling doesn't seem to be effective with \[...\] math mode. So, in the end I'd suggest to default `Latex-fill-break-at-separators' to nil.
