Sorry for your confusion. Current AUCTeX takes care of
`TeX-after-compilation-finished-functions' for only LaTeX and ConTeXt
documents; in `TeX-LaTeX-sentinel' and `TeX-ConTeXt-sentinel' we look
at T-a-c-f-f, while we don't in `TeX-TeX-sentinel'.
(The documentation is wrong with respect to this point. :-( The doc
string of T-a-c-f-f says:
  Hook being run after TeX/LaTeX/ConTeXt finished successfully.
                       ^^^
and the info says:
 -- Variable: TeX-after-compilation-finished-functions
     Hook which is run after the TeX/LaTeX processor has successfully
                                 ^^^
)

We should add treatment for T-a-c-f-f, similar with LaTeX/ConTeXt, to
`TeX-TeX-sentinel' for plain TeX users enjoying pdf-tools.
