Notice also, that because my reply is directly following yours, that I need not quote your message, because

  • it will always be shown with your message directly above it

  • there is no ambiguity, in the text of the reply, about what is being replied to

It's also worth noting that quoting is convenient for the sender, since they don't have to keep looking back at the message in order to check that they have incorporated responses to all the points in the original. This is, I imagine, why I (and, it seems, you) split posts into paragraphs that can be easily dealt with. I always appreciate that. On the other feeler, as you say, quoting is totally inappropriate if one wishes to avoid friction for the reader in a social context, where the communication is much more about the people involved than the content. Then you get the letter-writing ethos of ensuring that each and every point is unambiguously responded to just using words, which kills some of the terseness in the reply but is much more affable in personal contexts. Of course, I always take to quoting in discussion with geeks, regardless.

As for the modern methods of emailing, I'm afraid the only reason netiquette really died out is simply that modern graphical email clients that come with the major operating systems are very bad netizens and encourage top-posting. Now smartphones are encouraging it even more by being such poor tools for careful editing. While, as I said, I have no real objection to people replying as they please so long as they are ultimately understandable, I think email's conversational ability has actually been substantially hurt by the top-posters and one-liners and rambling synopses, all of which a minimally-quoted reply would forbid as a matter of course. But eh, that's a fight the netizens have lost, so I guess the best we can do is continue to use these methods in business scenarios where they are clearly helpful for productivity but which, because of poor email clients, (such as the widely-used and heavily-integrated Outlook) are almost never used.
