Well, I'm not sure how iOS is really any different to any other OS here, except in maybe you need a special piece of software (iTunes) to get the app onto your device. Clearly, if an app gets pulled, it gets pulled. You need to keep software you value--nothing can really compensate for that. And all software and hardware has a lifespan, so there will be a point where you can't run older code in a newer environment. But I would say that, unlike on platforms where there's a higher regard for backward compatibility and a lower demand for upgrading to incompatible versions for other reasons, the benefit of doing so on iOS is far less apparent. Like I said, I'm going to part ways with these old games now rather than hanging on, not because it's not technically possible, but because it's ultimately fruitless to do so. There will be an update to iOS that breaks them, sooner rather than later. Better to let go now, and be sure that all the apps you use are in the store, with full knowledge that they will at least be available for your device.
