That might be very well what's happening, and Windows has the tendency of switching to a new sound device if it finds one. The good news is that once you tell it to use something else, it will remember that choice and as long as the microphone will be plugged into the same USB port this won't happen again even if you unplug it and plug it back in. Fwiw you'd get the same thing happening on Windows XP.

Now about fixing the problem. First of all, some microphones may have a headphone jack on them that you can use to hear what the Mic is picking up, or what Windows sends to it, so look for one and if you find it just plug your headphones in so you can hear your speech to change your Windows device.

If it doesn't have one, plug it into your computer and change the sound card that NVDA goes through. This is actually easier than it sounds, even without speech. Just press CTRL+NVDA+S to bring up the synthesizer dialog, wait a second to make sure it came up , tab once to the output device combo box, press down arrow, and enter. You will either get speech back or not. If you don't, just repeat those 4 keys again until you do.
Now that you have speech you'll probably want to change your audio device in Windows away from the microphone, at least for playback. To do that, you need to get to the "sound" setting of control panel (searching in the start menu, either with classic shell or the normal Windows 10 one should find it). In the sound dialog, make sure you're on the playback tab, and go through the list of devices to find the default soundcard of your Computer. It will most likely say something to the effect of "speakers/headphones Realtek/Intel HD audio). Once you do, tab to the "set default" button and press it. And now you'll most likely lose speech again because of how NVDA internally figures out what device is what. So once again like in the beginning, hit CTRL+NVDA+S, tab once, p ress home and then enter. This will put NVDA's soundcard back on "Microsoft Sound Mapper" which will just make NVDA use whatever Windows uses. You should only have to do this once.
