To turn on Voice Assistant from S8/Note 8 onwards, press "Volume-Up+Power," since they do not have a "physical" home button. As For the A/J-Line and S-Line before the S7, do a "triple-click-home" on the "home button. The acception is with "Verizon," as it uses "Talkback" by default, as discovered within the below podcast:

Since Brad lives in the Uk, things indeed may be different than US models.
For example, if reading the vision" section of the "accessibility" settings of the "J7-Perks" from Sprint

, you'll see it says "Voice Assistant" in there, and not "talkback." This also applies to the "J3-Emerge" from Sprint as well.
However, you are indeed correct that the "J7-Prime" from "T-Mobile":
