1. No, there is no racing atmosphere realy. But you do hear sounds for the other rigs, the walls of the track etc. But it's very scifi and futuristic, and is there to let you know what's going on more than for atmosphere.
2. No, all of the music is of a similar dance/house style. I'm a big fan of the music, and it's probably fitting since this is meant to be a futuristic game where AI has taken over, but still. It would be interesting if other genres were there, but somehow I feel like that would break the vibe. But who knows, it would still be cool anyway.
3. Yes, I believe all of the missions are more or less playable. I believe I've completed everything, at least on standard, but some things do get really hard, and the difficulty is still being curved. But, basically everything is accessible so far as I understand, and the dev is planning on further refinements. So if you don't know whether it's worth buying the game, I'd say totally go for it. If you like the demo, you shouldn't be disappointed with the full game.
