You don't separate volumes. You can mod each volume, but everything will be going through to one master track, unless you get creative with REaper. You cannot drive your system output over the wire and record at the same time though, and the recording will be output to one master track in a typical use-case. This means that for recording live, you will definitely need a y-splitter to route your system audio through one of the stereo in's.
The volumes are changed via the knobs on the bottom of the board. The mic volume can be adjusted via the smaller gain knobs below the xlr insersions, and the pre-amp knob below that.
