I have actually done pottery with a wheel.  The basic stuff is fine, and yeah pinch pots are easy, but the fun thing is that anything beyond the very basics starts getting into "if you touch it you lose" situations because it can be quite fragile until it's hardened.  For example your flute is liable to just collapse if you start trying to widen all the holes, and once you've gone too far you'll have to entirely start it over.

Firing isn't a problem.  You put it in the kiln before you turn it on, you come back when it's cold.

It's quite doable though, just don't underestimate it.  It's not as easy as it seems if you want to do anything complicated.
