The dash is the key to pretty much everything in this game honestly. with asphodel the rooms are islands with lava in between them. Unfortunately the only way to really viably get past it is to grind with the mirror of night until you can withstand landing in lava a few times per level (with god mode on this is fine at 80% damage reduction).
Regarding targeting, the game will snap to the closest target. The sword is very hard to use though, I recommend using literally any other weapon first until you get a feel for ranges. Pretty much every enemy's attack has a startup sound so you can dash away from or past them depending on what you want at the right time.
