make your life easy and just use stock opengapps. They come with Talkback preinstalled, and are maintained by developers working on this so it's not going to break after an update and be unusable.
Also, FYI, you don't reinstall your stock Samsung firmware by booting into recovery, but rather through something Samsung calls the download mode, while on other phones it's often refered to as bootloader. That is the same mode you'll be using to flash the custom recovery, necessary for the rom installation itself. In general, any decently supported device is very hard to brick nowadays up to the point where it will be completely unusable and can't be restored to it's factory software.
As for the original topic, I highly recommend just updating a great, already existing guide about custom rom flashing. Many things are still accurate today, especially the general advice, but some things do need updating such as a newer zip for enabling Talkback, as well as someone who has experience with newer devices with a/b partitioning schemes.

Also, if you do want to install a rom that does not support the accessibility shortcut and want to enable Talkback, this zip file should be flashed after flashing your rom or gapps, and will flash as well as enable Talkback for you.
