There are a few ways to type on an iPhone. What you just explained there is called, standard typing, where you must find a letter, and then double tap to input it in to the edit field.
I think you are probably use to the typing that is found on Android phones, where you can drag your finger to the letter and then lift up.
That is called, touch typing.
When you are focused on an edit field, you can then start to turn the rotor until it says, typing mode, swipe down and you should see, standard typing, touch typing, and direct touch typing. The one you want is, touch typing.
