At least this problem is getting a lot lewss annoying than it used to be. Now for the most part apps support other ways of getting at their data, some have http and ftp servers, other integrate with the new document sync API's so you can use dropbox or google drive or what have you. Contacts and Email can be synced online. The only part that's still impossible without iTunes is adding to the built-in music library of the device. Unless all of your music comes from the iTunes store, in which case you can just download it, you'll have to sync your music via the iTunes app
