You certainly can and I do this all the time.

Required: one ISO of XP, one virtual floppy disk with answer file, one blank virtual hard disk, and a boot by default to the virtual CD.

The contents of the answer file are documented in the deployment tools that come with Windows. If you would like one, let me know. Some of us on here will surely also give you images if you need them.

Finally, what virtualisation software do you use?
