I'm surprised there isn't a topic about this, as it is definitely an enjoyable game. One tip about blocking with your shield - after you pinch, be sure to keep your fingers on the screen - meaning you can't just pinch and release, you have to pinch and then leave them there.
Oh and by the way - if you want to practice the pinch gesture, just draw your sword sometime when you're not in danger and you can practice the combat gestures. You'll know you've succeeded in raising your shield because all of the audio around you will get muffled.
