I don't think rolling DAC chips is an option.  If you look at the
datasheet for the PCM1748, you'll see that its a 16 pin SSOP/QSOP
package.  Take a look here:

Brown Dog (http://cimarrontechnology.com/) doesn't sell adapters for
this footprint and I'm not really aware of any other DACs that are pin
compatible anyway.  
So the answer is that simple plug and play chip swapping isn't really
an option.  
I guess you could try to hardwire in a standard 16pin DIP socket and
then get some SSOP/QSOP smd to dip adatpers from the following folks:
http://www.epboard.com  - look for adapter E16-0075 but thats actually
very kludgy and prone to problems and a lot more work than just
unsoldering one chip and soldering in another.
