This is something I've been doing for about 12 years now, and have put
up a page of notes about it here: http://www.delback.co.uk/lp-cdr.htm

Another well-known set of notes is Allen Reny's at
http://www.a-reny.com/iexplorer/restauration.html, although those notes
are specifically tailored for CoolEdit (now Adobe Audition).

A Google search on "LP to CD" should find a few other useful sites,
although of course you'll have to wade past those offering a commercial
transfer service.
