If its only a few cds that need careful extraction, I am sure you can find access to a PC and install EAC on it temporarily. If the CDs are in the accuraterip database, you should be able to get confirmation on the quality of the rip with the Accuraterip plugin enabled. If you are using a PPC based mac, another alternative would be to rip with EAC within a windows emulator like virtual pc.
