Apple lossless is, well, lossless, just like FLAC - there's no question
about getting excellent results; the results are identical to the
original CD data.  For that reason it doesn't matter if you first rip
to lossless and then convert, or just convert straight from the CD.

Personally I don't see the point of ripping anything to a lossy format
given how cheap hard disk space is, unless you need it for a portable
player.  Even then you should rip to lossless; then whenever you want
you can convert the lossless files to a lossy format for transfer to
the player.
