I'm using Cat5 cable for I2S connection between boxes but I'm using LVDS on the interface. It works wonderfully and the EMI from the cable is quite low with low voltage swing. If you use 3.3V or so you will need a high current driver which can be problematical for jitter, all that current going onto the ground bus etc. I tried with both 3.3V signaling and LVDS and greatly prefer LVDS.
