The only technical reason I know of is jitter. It's clear that different cables can affect the jitter spectrum differently (depending on length, R, L, and C, impedance mismatches in the connectors causing reflections, etc.). However I've never seen any evidence that those differences are audible. Furthermore the best designed modern DACs are immune to jitter (that's clear from their design and has been verified by measurements), and most of the rest are quite resistant to it.
