Cables make a difference, but probably mainly due to the differences in RLC they present to the amp. My low inductance (low L) cables caused oscillation in one of my older amps (which was designed before anyone had even tried anything but normal figure-8 cable). But even if nothing as severe as oscillation happens, the margin to oscillation may be affected, which will affect sound.
