The term "normalize" usually implies that the audio data is changed to reflect the normalized sound. Replaygain, on the other hand, does not change the audio data. Rather, it writes gain adjustment values to the tags.
You can have SlimServer process the Replaygain values, or have SlimServer ignore them. Most of the time the Replaygain values turn out to be less than zero, so if processed the volume will be lowered. That will reduce the signal to noise ratio. In my experience, with my system, in my room, with my ears, I have not been able to detect a meaningful difference.
