EAC is considered to be the "gold standard" CD ripper, because it can be
set up to do bit-perfect rips, though it is generally slower than some
other rippers.  It's a bit of a pain to set up, but once you have the
right settings for your drive, it works well.

Many are having success with the latest version (ref 12) of dBpoweramp,
which also can do bit-perfect rips, is somewhat quicker and easier to
set up, has a friendlier interface, and can give similar excellent
results.

EAC is free; dBpoweramp is $28.  You may be able to rip your collection
quicker with dBpoweramp.  There's a 30-day trial, so you can test both
programs before deciding which one is better for you.  I've been using
EAC since...geez, maybe 1996, but I'm now quite happy with dBpoweramp.

FLAC is generally considered the best lossless format to use;
Squeezebox decodes it natively, it is free, open source, technically
advanced, and has excellent metadata support.

mp3tag is an excellent FLAC tagger.  You will add most of your tags
with your ripper, but you'll probably want to add more information like
cover art, composer tags, multiple genres, etc with a separate tagging
program.
