I think one difference is that most audiophiles have spent decades developing and refining their ears as they've moved into better and better systems.
But until recently, there hasn't been a large market for high-end video equipment. People just bought whatever size TV they could afford, and if they were well-informed maybe they bought a Trinitron instead of the department store brand. I remember in the late 80s my friends thought I was insane for spending $600 on a hi-fi VCR, and couldn't understand why anyone would play TV audio through their stereo system. Now home theater is everywhere and there are 10x more choices than there used to be.
