Before buying the DA10, my SB3 was connected directly to my tube amp.
and I kept the volume fixed at the amp level and, because tubes need a
minimum volume level to sound good (and this level is often to loud), I
reduced the volume at the level of the SB3.

If I understand, now, I have to keep the digital volume control at
fixed on the SB3 and to adjust (often, to reduce in my case) the volume
on the DA10.

By "Keep the SB3 volume at fixed", do you mean that I have to
desactivate the digital volmue control of the SB3 or just set it to a
specific value and keep it fixed at that value?

Please, just to understand, could you explain why you advise to keep
the SB3 volume at fixed?
