channel 1 + 2 = left + right
yes it will work, you should get the "benefits" of a balanced
connection by setting the speakers to +4dB and using long (greater than
5 metres) xlr cables from the aphex to your speakers (and a short pair
of rca cables from sb to the Aphex).

The gain controls on the Aphex can be used to limit the peak levels to
some extent. I'd turn them all the way down then set level with the SB
volume. Then experiment to see if the SB volume gives you the
adjustment range you need. You'd want the SB level to stay above (say)
60 at the quietest listening level as a rough guide...

However, since your speakers have a -10 dB sensitivity option, I'd try
that first, without the Aphex. Just use standard bal-unbal rca-xlr
cables. Unless the cables are very long or you live in a hostile
RFI/EMI environment it shouldn't make a really big difference.

The limiting factor in your source setup will be the analogue output
stage of the SB3, regardless of whether you use the Aphex or not.
